Carol Elrod Vincent, age 91, of Apopka, Florida, passed away on January 7, 2025. She was born in Orange County, Florida, and attended Apopka High School, where she met the love of her life, Donald Cooper Vincent.
Donald’s career with The Coca-Cola Company took them around the country: first to Houston, TX, then to Atlanta, GA and eventually back to Maitland, FL. Over the years, Carol held various positions as a teletype operator, a secretary for the local school system, and the proprietor of a dress shop. However, her greatest joy came from being a devoted wife and mother to three children.
After retirement, Carol and Donald enjoyed spending time at their beach condo in New Smyrna, boating and fishing on the Suwannee River, and relaxing at Springdale Country Club in Canton, NC. Each summer, she hosted her grandchildren and friends at the family’s mountain home, where she delighted in sharing food, fellowship, and her many recipes. A dedicated member of both the Zellwood United Methodist Church in Florida and the Cruso United Methodist Church in North Carolina, Carol maintained a strong faith throughout her life.
Carol is lovingly remembered by her daughter, Debra (Robert) Ryan of Apopka, FL; her five grandchildren, Joshua, Amanda, Sarah, Erika, and Robert III; and her four great-grandchildren, James, Emma, Aurora, and Margot.
She is predeceased by her husband, Donald Cooper Vincent; her daughter, Donna Carol Crosby; her son, Thomas Cooper Vincent; and her grandson, Ryan Patrick Redmond.

Private services will be held. A public memorial service will be planned for the late spring 2025. An online guestbook is available at www.hardenpauli.com. Arrangements are entrusted to Harden/Pauli Funeral Home in Eustis, Florida.
Carol will be missed deeply by her family and friends, and her legacy will continue to live on in the hearts of those who knew and loved her.
